Salsa de Huevo

Ingredients

  • 7 eggs

  • 6 tomatoes

  • 3 chiles serranos

  • 2 small garlics

  • 1/3 onion

  • Salt and Pepper

  • Optional: Top off with queso fresco

Directions

  1. On a comal, char the tomatoes, chiles serranos, garlics, and piece of onion

  2. Add the ingredients from step 1 into the blender and add some salt and ¼ cup of water.

  3. Crack the eggs in a bowl and add salt and pepper. Whisk the eggs with a fork

  4. In a pan with oil, saute a few thin slices of onion and then add the eggs.

  5. Once eggs are done, add the sauce from your blender and let it come to a boil.

  6. Optional: Top off with some queso fresco
